Vegetarian Chicken Tortilla Soup

A delicious vegetarian tortilla soup that captures all the classic flavors using plant-based chicken, beans, and a mix of fresh toppings including vibrant herbs like cilantro or parsley.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (14.5 oz) diced tomatoes
  • 3 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 package (8 oz) plant-based chicken, shredded
  • Salt and pepper to taste
  • Tortilla strips
  • Fresh cilantro or parsley, chopped
  • Avocado, diced
  • Lime wedges

Directions

  • In a large pot, heat olive oil over medium heat. Add onions and garlic; sauté until onions soften (about 5 minutes).
  • Add bell pepper and cook for another 3-4 minutes until tender.
  • Stir in black beans, corn, diced tomatoes, vegetable broth, chili powder, cumin, and smoked paprika. Bring to a boil, then reduce heat and simmer for 15-20 minutes.
  • Add the shredded plant-based chicken and cook for an additional 5 minutes until heated through. Season with salt and pepper to taste.
  • Serve hot, garnished with tortilla strips, fresh cilantro or parsley, avocado, and a squeeze of lime juice.
