Spicy chicken tacos

Grilled chicken tacos with spicy chipotle mayo and pickled jalapeños, topped with fresh salsa and avocado. A perfect dish for taco night!

Ingredients

  • 1 pound chicken breast, sliced into strips
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 soft corn tortillas
  • 1 cup fresh salsa
  • 1 avocado, sliced
  • Lime wedges, for serving
  • 1/2 cup mayonnaise
  • 2 tablespoons chipotle sauce (or to taste)
  • 1/4 cup pickled jalapeños

Directions

  • Preheat the grill to medium-high heat.
  • In a bowl, combine the chicken strips with olive oil, cumin, chili powder, salt, and pepper. Mix well to coat the chicken evenly.
  • Place the seasoned chicken strips on the grill and cook for 6-8 minutes, turning occasionally, until fully cooked and no longer pink in the center.
  • Warm the corn tortillas on the grill for about 30 seconds on each side or until soft and pliable.
  • In a small bowl, mix mayonnaise and chipotle sauce until well combined. Adjust chipotle sauce to taste for desired spiciness.
  • Assemble the tacos by placing grilled chicken strips in each tortilla, topped with fresh salsa, sliced avocado, and pickled jalapeños.
  • Drizzle the spicy chipotle mayo over the tacos before serving.
  • Serve immediately with lime wedges on the side.
