Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons chipotle marinade
  • 4 cups mixed greens
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Directions

  • Preheat the grill to medium-high heat.
  • Marinate the chicken breasts in chipotle marinade for at least 30 minutes.
  • Grill the chicken for 6-7 minutes per side until fully cooked and juices run clear.
  • Let the chicken rest for a few minutes, then slice it thinly.
  • In a large bowl, combine the mixed greens, avocado, and cherry tomatoes.
  • In a small bowl, whisk together lime juice, olive oil, honey, salt, and pepper to create the vinaigrette.
  • Drizzle vinaigrette over the salad and toss to combine.
  • Top the salad with the grilled chipotle chicken slices and serve.
