This recipe is for making noodles using spaghetti squash, cooked quickly in the microwave, and served with a homemade sauce.
Ingredients
- 1. 1 spaghetti squash
- 2. 1 cup crushed tomatoes (for homemade sauce)
- 3. 1 tablespoon olive oil (for sauce)
- 4. 1 garlic clove, minced (for sauce)
- 5. 1 teaspoon dried oregano (for sauce)
- 6. 1 teaspoon dried basil (for sauce)
- 7. Salt and pepper to taste (for sauce)
- 8. Grated Parmesan cheese (optional, for serving)
Directions
1. Cut the spaghetti squash in half lengthwise and scoop out the seeds.
2. Place the halves cut-side down in a microwave-safe dish.
3. Add a small amount of water to the dish (about 1/4 cup).
4. Cover the dish with plastic wrap, leaving a small vent for steam to escape.
5. Microwave on high for about 10-12 minutes, or until the flesh is tender.
6. While the spaghetti squash is cooking, prepare the homemade sauce. In a small saucepan, heat olive oil over medium heat and add minced garlic, cooking until fragrant (about 1 minute).
7. Add crushed tomatoes, dried oregano, dried basil, salt, and pepper to the saucepan. Stir well and let simmer for about 5-10 minutes.
8. Let the spaghetti squash cool for a few minutes, then use a fork to scrape the flesh into noodle-like strands.
9. Serve the spaghetti squash noodles topped with the homemade sauce and optionally sprinkle with grated Parmesan cheese.
